Different varieties of prawns
1#King Prawns – They are bigger than the tiger prawns and are most popular in Australia. They have a rich flavor with moist, medium-firm flesh. When they are raw, their tail ends are blue. Since they are available all year around, the best time to eat them is from late summer to early winter. These could be better tied with a delicious dipping sauce or in a seafood salad.
2#Tiger prawns – They are large and flavorsome and having a firm flesh, moist and medium flavours. They have the distinctive blue; grey and black strip that after being cooked turn into red. You can find them all year around from late summers to mid-autumn. To make them more lip-smacking, serve them with mayonnaise or aïoli to bragger their thespian colour.
3#Banana Prawns – They are the sweet and mild flavored prawns with medium in size and come up in two varieties- regular banana prawns with red legs and white banana prawns with cream and yellow legs. They are available in mid-autumn. In order to cook them, just chop it into the pieces and make the prawn cakes and terrines. You can also use them in Asian dishes as their sweetness goes well with the spicy flavours.
4#School prawns – They come tiny in size and have a short shelf life with moist and sweet in taste and available in the cooked form. One can find them in late spring to early autumn.
